Perfect Pancakes
Since these pancakes have been one of the first recipes worth being called that, I have made them time and time again. But every time again, they are surprisingly easy to make and always turn out well-tasting!

Ingredients
- ¾ cups all purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup milk
- 1 large egg
- 2 tbsp butter
- 1 tbsp mineral water
- Maple syrup and random fruits for garnishing
Preparation
- Sift together flour, sugar, baking powder, baking soda and salt.
- Melt half of the butter in a pan.
- Whisk milk, egg, melted butter and mineral water into the flour mixture.
- Heat a flat skillet up to medium heat.
- For each pancake: Melt a fifth of the remaining butter in the skillet, scoop in a fifth of the pancake batter (approximately half a cup) and cook until it starts bubbling, Then flip and cook until golden brown.
- Serve with maple syrup and seasonal fruit. (Works best with strawberries, red currants or blueberries.
