Earthquake Cookies
A quick and easy to make sweet snack that goes really well with coffee!

Ingredients
- 300g all-purpose flour
- 150g cane sugar (brown also works)
- 120g butter (half a block)
- 50g cocoa powder
- 2 eggs
- 1 espresso (about 50ml)
- 1 tbsp baking powder
- 50g granulated sugar
- 50g powder sugar
Preparation
- Melt butter in a pan
- Whisk together butter and cane sugar with a mixer
- Slowly add eggs and espresso into butter mixture
- Mix flour, cocoa powder and baking powder
- Whisk flour mixture into butter mixture. Don't worry if the mixture is still a bit runny afterwards.
- Cover with cling film and let chill for 2 hours
- Pre-heat oven to 180ÂșC
- Prepare two dishes with granulated sugar and powder sugar for dipping
- Scoup out about ping-pong ball sized chunks of dough, roll them into a ball and dip them first into granulated and then powder sugar
- Place balls about 10 cm apart from each other on a baking tray an cook for 15 minutes.
